Chris Bianco - Bianco Restaurants

When Chris Bianco started Pizzeria Bianco in the back corner of a Phoenix grocery story in 1988, he had no idea he would become a driving force in the artisanal pizza movement. All he knew was that his food would reflect the respect and sincere intention that he brings to each of his recipes, as a result of his relationships with farmers, local producers, customers and staff. Today, Bianco owns and runs Pizzeria Bianco and Pane Bianco (both with locations in Phoenix), and Tratto, his white-tablecloth restaurant featuring handmade pastas and seasonal favorites. In 2003, he won the James Beard Award for Best Chef Southwest, the first pizzaiolo to receive the honor.
Why this dinner is important:
“The pandemic and its trickle-down effect is beyond anything I’ve seen or could have imagined prior to now. The industry is losing long-time employees with no guarantees for them—or us—on when or if they’ll return to work. And if they do, what will that look and feel like? The economic side is easy to understand; we are beyond compromised and in need of unprecedented assistance. The mental aspect, however, will be something to reckon with and study and grow from. We continue to push forward because we feel it’s our only hope for survival. The jury is out…hopefully they will show up for dinner when they are allowed to.”
